A 17-week shelf life for liquid egg in Gable Top cartons

For both egg processing and pasteurization machinery manufacturers and producers of Gable Top liquid egg packaging machines, the main objectives are to ensure an extended shelf life and to preserve the quality of the product.

Continuous research is at the core of our efforts to guarantee ideal hygienic conditions throughout the process.

In cooperation with a partner specialised in egg processing, we carried out an important field research project, which has led to the validation of a shelf life beyond four months for liquid egg in Gable Top cartons.

The project was implemented on an existing packaging line machinery - comprising a Galdi packaging machine - and developed over a 6-month period, during which we carried out several tests and regular checks.

The tests were conducted on whole egg and egg yolk products packaged in Gable Top cartons.

At the end of the 17th week of refrigerated storage, the products were found to be compliant with regulations.

The microbiological, chemical and functional tests we carried out during the 4th month showed the following results:

• Stable pH and dry matter in whole egg and egg yolk
• Slight increase in lactic acid, but levels were well below legal limits (<1000 mg/kg dry matter)
• Slight increase in yolk viscosity within acceptable limits
• Stable product functionality and sensory perception throughout refrigerated storage period.
• Optimal microbiological parameters up to the end of the 4th month of refrigerated storage.

These results were validated by an external laboratory.

The long standing experience in the liquid egg packaging industry using Gable Top cartons has allowed us to gain a deep understanding of the product.

This is essential to ensure the best hygienic conditions throughout the packaging process for liquid eggs, and also to maintain the product's properties during the most critical stages of the process (e.g. dosing), so that the organoleptic and nutritional qualities of liquid egg remain intact.
